Nuts & Seeds Granola

Summer is here to stay. So, instead of complaining about the rising temperatures, why not enjoy all the good that this season has to offer.

Yup, summer comes along with unbearable heat, but it also brings along summer vacations (woohoo!).

Vacations that are packed with lots of idhar-udhar ka trips, pool-time (mostly for my hubby & kids. I’m not a pool person. I know what you must be thinking, “Kaun hain yeh aurat?!” 😱), and many other fun activities.

Before you go all out and about enjoying your vacation, one smart thing to do is to prepare make-ahead snacks.

Let’s admit it, no matter how much ever you love cooking, you’re still gonna be hot mess 😜 dishing out a meal during the scorching season.

That’s when making a big batch of granola comes to the rescue! 😉

Make it once and your breakfast & snacking item is sorted for a good amount of time.

Have it up with almond milk or any other milk of your choice topped with berries.

 2.50 cups Gluten Free Oats
 1 cup Nuts (I used walnut n almond)
 ¼ cup Coconut Oil
 2 tsp Cinnamon
 Pinch of Sea Salt
 ½ cup Maple Syrup (less or more according to your liking)
 ½ cup Seeds (pumpkin & sunflower)
 Goji Berries (according to your liking)

Preheat the oven at 120 degrees.

Mix all the dry ingredients(except the Goji Berries ), then the wet ingredients.Next combine the dry & the wet and spread it on a tray lined with parchment paper.

Bake for 30-40 minutes but stir the mixture once or twice in between to avoid burning.

Once done, add in the berries and let the granola cool.
(At this point you won’t find it very crunchy, don’t worry as it cools down it’ll get its classic crunch 😉)

Once cooled, store the granola in an airtight container. This will last you for a month.
