Coconut Pudding with Mango Compote

Mango mango please don’t go!

So, before the mangoes go gaayab, I made coconut pudding & mango compote.

Cooked it without refined sugar 😉 It’s a vegan, vegetarian & gluten free recipe.

A simple easy dessert that you can make using any seasonal fruit of your choice.

Also, if you don’t have access to coconut sugar, you could use normal sugar too.

Coconut Pudding
 400 ml Coconut milk (fresh/canned)
 3 tbsp Coconut sugar
 3 tbsp Cornflour/Chia seeds
 1 tsp Vanilla extract
Mango Compote
 150 g Mango (chopped)
 ½ tbsp Coconut sugar
 ½ cup Water
To make coconut pudding

In a pan add the coconut milk & bring it to a boil, then add the coconut sugar.

Next add the corn flour or chia seeds to thicken the mixture.
(If you’re using chia seeds, warm the coconut milk & sugar together.Then add the chia seeds.)

Pour in cups & refrigerate to set .(You can put a layer of chopped mangoes and then pour the pudding mixture & refrigerate)

To make the compote

In a pan add the mangoes, coconut sugar & water

Boil till the mango softens & the mixture thickens.

Let it cool.

Serve

Top the set coconut pudding with the compote.

Garnish with a sliced mango or mint leaves or a cherry. Serve cold.
