My kids fortunately aren’t fussy eaters but well unfortunately they aren’t big fans of carrots but they sure do love gajjar ka halwa so when i went carrot shopping recently I found these beautiful looking black carrots which I oh so excitedly got home.
And well.......not to my surprise.......my kids didn’t share the same excitement. But well oh well I’m a mommy i know how to make them eat it.......hehehehehe.......i made their fav & again not to my surprise they enjoyed it.
My little weirdos hahahahaha carrot haters but i find the ways & means to incorporate this lovely, healthy, yummy, nutrient rich vegetable in their diet through different ways & means. I’m sure all the mommies agree with this trait right.
You can make this halwa with any carrots red or orange or black. The kids really enjoyed eating the black carrot halwa because the colour seemed to really peak their interest & all they did while eating was laugh being amused with the colour & saying yummmm mumma yummmm, hahahaha i told yaaaa weirdos.
Definitely try out the recipe, it’s quick, it’s simple, it’s delicious & definitely kids approved.
A yummy winter delight thats gluten free & refined sugar free.

In a wide bottomed pan heat ghee on a medium flame & add the grated carrots. Fry the carrot for about 3-5 minutes.
Next add the milk ,stir & cook on low flame.
Next add the cardamom powder & grated jaggery & stit well.
Let this mixture cook for another 10 minutes till the milk has 80% evaporated.
(If you like a little crunch & bite to your halwa then at this point you could put the flame off .)
Or cover the pan with a lid & let the mixture cook for about 7-10 minutes i.e. till the carrots soften fully & the ghee starts separating.
