Chocoalate Banana Loaf

Healthy doesn’t have to be boring or difficult or tedious right & especially when it comes to kids.

So when I have bananas that have been forgotten about (hehehehe) I make my healthier version of banana loaf using them & well add in dark chocolate to that mix and oooo la laaa deliciousness is ready to devour.

This recipe isn’t just gluten free, refined sugar free & healthier but so simple, so easy & so delicious to make. I’m sure you’re going to be leaving the bananas on the counter unattended & waiting for them to over ripen to make this loaf again & again .

Also besides being yum & easy this recipe is fun to make with kids and well bonus points, it’s a one bowl recipe. So fun activity with kids plus not many utensils to wash. Win-win correct.

Quick, one bowl, easy & super delicious Chocolate Banana loaf.

 1 cup Mashed over ripe banana *
 1 cup Almonds ground (1 cup almonds will give you 1 1/4 cups almond flour)
 2 tbsp Coconut Sugar (or 1 1/2 tbsp white sugar) *
 2 tsp Unsalted Butter (You can use salted butter too, so in that case omit the Pink Himalayan Salt)
 2 Eggs
 1 tsp Cinnamon
 1 tsp Baking Soda
 2 tsp Vanilla Extract
 1 tsp Himalayan Pink Salt (Omit this if using salted butter)
 100 g Dark Chocolate chunks

Preheat the oven at 160 degrees. Grease an 8" loaf pan and keep ready.

In a bowl add all the ingredients except the chocolate and mix well.
*Note :- The riper the banana, the sweeter it is. This means you can completely omit the sugar or you can adjust the sugar quantity to more or else i.e. according to your sweet buds.
Coconut sugar is easily available online.

Once done add in the chocolate chunks.

Stir it all in & mix well.

Pour the batter in the loaf pan & bake for 30 minutes then do the tooth pick test i.e. insert a toothpick in the middle of the loaf and if it comes out clean then your loaf is ready,if not then let it continue to bake for another 10 minutes & repeat the tooth pick test.

Once the loaf is baked ,let it cool completely before taking it out of the loaf pan to avoid cracking.
TIP:- Run the back of the knife or a spatula all around the loaf to loosen the edges, this will help in removing it from the pan.

OPTIONAL-Once completely cooled drizzle melted chocolate on top.

Gently cut in slices & serve

Delicious Tip :- Once completely cooled do refrigerate the loaf for about 2-3 hours, this will help in cutting it in slices easily.
Also wipe the knife after every cut to get smooth & clean slices.

Delicious fact - This Chocolate Banana Loaf tastes better the next day.
