Vegetable Khichdi

If you don’t make the time to work on creating the life you want, you’re eventually going to be forced to spend a lot of time dealing with a life you don’t want. Agree?!

Well, today was another step I took towards developing and nurturing my passion. I worked on conducting my own cooking workshop 😃and I’m so happy with the development💃🏻.

While spending the whole day steering the workshop, I realized I also got to eat, right 😅

With too many veggies sitting in my refrigerator, I had to use them all up, before they got rotten. In such a situation, I usually end up making either a broth and store it for future use or make a soup and have it right away or make khichdi.

Today, I decided to cook a healthy Vegetable Khichdi! 😋

This simple comfort food teamed with protein like paneer, chicken or egg makes it a complete meal.

 ¾ cup Moong Dal/Lentil
 ¼ cup Rice (preferably brown rice or hand pound rice)
 1 cup Mixed Vegetables (I used broccoli, french beans, carrot, green and yellow zucchini)
 1 tsp Haldi/Turmeric
 1 Kadipatta
 10 Garlic (chopped/crushed)
 ½ Ginger (crushed)
 1 tsp Jeera
 10 Peppercorns
 1 Onion
 3 cups Water (sometimes I add more water if I want the consistency to be watery)
 1 tbsp Ghee (If you're making a vegan version, use coconut oil instead)

Wash and soak the dal & rice for about 15 minutes.

Heat ghee in a pressure cooker and add the jeera, kadipatta, garlic, ginger and peppercorn. (Don’t burn the spices).

Then, add onion and fry for a minute.

Next, drain the soaked dal & rice and add it to the cooker. Fry well for about 2-3 minutes.

Then, add the vegetables, turmeric & salt. Give this mixture one more stir and add in the water. Close the lid and let the whistle blow once. Then put the flame off and wait till all the steam from the cooker is settled.

Open the lid and serve garma-garam with pickle or dahi or papad or salad or with all 😉😅.
