Creamy Paneer on Toasted Multigrain Bread

I made these for the Kids Workshop I had conducted in July 2019. I can proudly say it was a winner, among the other recipes we cooked! The kids loved preparing & eating it!

However, the first time I ever made this was as a trial for my kids.

My son is an absolute paneer-hater (I know right! 🤷🏻‍) and my daughter dislikes carrot & capsicum 🤦🏻‍ (I know, I know, kya tragedy 🙄). So, when I made this dish, I played a smart move which most caring mommies do that is - not to tell your kids what they’re eating, until they’re done eating it all. (Don’t judge me!)

Soon after my son was done relishing 4 toasties 😜 and my daughter couldn’t stop licking her fingers 😆, I broke it to them that what they ate had paneer, carrot & capsicum in it.

The shock on their face, gosh! Priceless! 🤣 and like you all know, for everything else there’s MasterCard. LOL (Please don’t disown me for this sad PJ 🙊)

So, the takeaway moral here is: If you have 2 or more kids & each with their own food drama, then mix their dislikes in one dish & come up with what they might just absolutely love! 😅

 1 cup Paneer (grated)
 ½ cup Cream Cheese
 ¼ cup Carrot (grated)
 2 tbsp Capsicum (finely chopped)
 2 tbsp Spring Onion Greens (to mix & for garnish) (finely chopped)
 1 tsp Black Pepper Powder (as per taste)
 10 Multigrain Bread Slices
 Butter as required
 Salt (as per taste)

Apply butter on the bread & either toast in a 200-degree Celsius preheated oven for about 7-10 minutes or grill it on a pan.
(To grill it on the pan; apply butter on bread and put it on hot tawa. Toast till it becomes crisp on both sides.)

While the bread is getting toasted prepare the topping.

Mix all the ingredients and reserve some spring onion greens to garnish & keep aside.

On the toasted bread spread the creamy mixture & garnish with reserved spring onion greens.
Serve immediately.
